Chocolate Covered Strawberries & ChocoMickeys

My family LOVES berry season. Every week we probably take home 9 pounds of strawberries and 4 pounds of blueberries from the Farmer’s Market. Between Green Juice/Smoothies to breakfast and snacks, sometimes our weekly Farmer’s Market Haul won’t last 3 days. Quick berry tip: to keep berries fresh and mold free, soak them in a bowl with 1 part apple cider vinegar and 10 parts water. Dry well and lay in a single layer between paper towels. Try not to let berries touch each other. Freeze to extend shelf life.

I love making chocolate covered strawberries. Melting chocolate correctly can be a very daunting task (tempering chocolate so to produce crisp, shiny chocolate that doesn’t melt in your hands), so I usually just melt my chocolate in my Wilton Chocolate Pro and let the kids go to town. To harden the chocolate quicker, you can stick strawberries in the fridge or freezer. I also make ChocoMickeys (or Chocomations for you Vinylmation fans) for the kids. It’s easy as taking fun ice cube tray and pouring in melted chocolate.

Here’s what you need for Chocolate Activity:

  • Strawberries (washed and dried well – any water drops will ruin your chocolate!)
  • Bag of Chocolate
  • Microwaves-safe bowl or Wilton Chocolate Pro
  • Wax Paper
  • Cookie Sheet
  • Ice cube trays with fun shapes

For Chocolate Covered Berries:

  1. Melt chocolate in Wilton Chocolate Pro or bowl (consult your chocolate bag for instructions, varies with chocolate)
  2. Dip strawberries as close to leaf as possible
  3. Lay flat on wax paper-lined cookie sheet
  4. Place in fridge or freezer to harden chocolate for 10-15 minutes

For ChocoMickeys (or ice cube trays with fun shapes – shallow is better)

  1. Melt chocolate in Wilton Chocolate Pro or bowl (consult your chocolate bag for instructions, varies with chocolate)
  2. Pour in ice cube tray
  3. Gently tap ice cube tray to get rid of air bubbles
  4. Place in fridge or freezer to harden chocolate for 10-15 minutes

Last step for both tasks, eat and enjoy!
